"Emma" Inspired Apple Celery Root Soup with Parsley Oil

So Don't Celery Root Soup always remind you of Emma !???
 especially this 1996 adaption with Emma (Gwyneth Paltrow) and  ( Mr. Knightly) Jeremy Northam ,
 When  Harriet Smith (Toni Collette) and  Emma ( Gwyneth) Came back from the Clarks ( assisting them in need.
Then They met up with ( Alan Cummings)  and they fall into conversation about Food , with Celery Root Coming Up lol

 So anyhow lol I am as many of you KNOW a HUGE JANE AUSTEN FAN and this recipe is in loving reminiscing of all Things Jane  😊😊
 I originally Adapted this recipe many years ago and took out my scribblings and dusted them off and made a few more tweekings and made and served it at my Roaring 20's Birthday Party ! πŸ˜†πŸ˜πŸ˜ƒ

  So I hope you Enjoy it and I will be mentioning a few suggestions in the post for example :
 You are more than welcomed to ROAST the Celery root first if you want, if you don't have time that is okay too , its your OWN choice! :)  & You can Also Make this a CREAMY Soup or Non Creamy Soup , also Dairy free if you wish!!! So many Possibilities !

Celery Root ( Celeriac) Apple Soup with Parsley Oil 
 2 Tab of Extra Virgin Olive Oil
2 Tab of Butter  or Earth Balance
1 medium to small onion ( if wished) peeled and chopped into small pieces
5 Cloves of Garlic Minced
4 Cups of Peeled and chopped Celery Root
3 or 2 1/2 Cups of Apple of choice , peeled and cored and cubed ( set some matchsticks aside for garnish) .
2 Medium Potatoes peeled and cubed ( this can be left out if your dietary restrictions do not allow it)
6 Cups of Stock of Choice ( I use my Homemade Bone Stock ) But A  Vegetable Stock will work well if Vegan ).
1 Tab of Apple Cider Vinegar or Lemon Juice
1 Tab of Honey or Maple Syrup (If Vegan or Agave Nectar)
1/2 Tsp of Cumin
1 Tab of Ground Coriander
2 Tab of  Finely Minced Parsley

Heat oil and Butter ( or Butter Substitute) in a large Pot over Medium Heat.
When warm add the chopped onions and garlic, mix until they are translucent .
 Then add the Apples, celery root and potato (if used), and mix thoroughly .
 Add the Stock of choice , Bring the soup to a boil then reduce to a nice simmer for about 25 min or until the celery root and potatoes are done NOT MUSHY!!! Take note of that no one wants mushy roots or veggies .

 Then Remove the Pot from  your stove.  Blend In a Blender until Smooth and Creamy , making sure no lumps are present what we want is a nice smooth Lump free Soup πŸ˜ƒπŸ˜ƒ
If its Too Think Simply Add More Stock.
TO NOTE if you wish to add CREAM Do it now :)
Return the soup to the Pot and add your Acid Of Choice ( Apple Cider Vinegar or Lemon Juice). IF NOT ADDING CREAM! IF ADDING CREAM OMIT the acid as your cream will curdle.

Garnish with Apple Matchsticks and Parsley Oil ( Recipe Below) 

Parsley Oil
in your Food Processor add 1/4 Of pure Extra Virgin Olive Oil and a handful of Fresh Parsley Blend until the parsley is fully cut, Then Run thru a SEIVE and Discard the Parsley. ( I always add the parsley to my next meal for the next day or for Chicken Stock as to not waste anything ) .

Organic Beet Sweet potato Apple Soup drizzled with Tahini (VEGAN_)


  1. When I made this soup I had gotten an  over whelming amount of outdoor and Indoor work today ( not to mention it was raining like a tropical storm and the wind was ridiculous but not really tropical because its late fall in the Pacific Northwest and its cold lol hahaha Now I am taking Some Delicious Organic Various beets ( red and golden) and apples from the orchard and making a delicious Soup for Tonight ! I'm thinking along these lines Organic Beet Sweet potato Apple Soup drizzled with Homemade Tahini
    And also a side not if you have time Roast your Veggies before hand if you can if you cant and are pressed for time that is okay too , the roasting however brings out the natural sugars and more flavor but I make it both ways depending on the time frame I have , ENJOY !
This Soup is perfect with all the winter root veggies all about !

2 or 3  tab of Earth Balance or Oil of choice ( Coconut , Olive , so forth)

1 Leek chopped ( white and light parts only) ( if tolerate we don't use them)

4 Garlic Cloves, minced

3 or 4 large sweet potatoes , cut into cubes (peeled)

5 Large beets - I used gold and red

2 Large carrots peeled and chopped 

1 LARGE Apple peeled and cubed
1 tab of honey 

6 cups of Broth of Choice ( Of course if your version if VEGAN use Veggie Broth :)

Salt and pepper
1 1/2 tsp of Coriander
1 tsp of Cumin

add your oil of choice to a stock pot and add your root veggies ( beets, leeks, carrots, sweet potatoes ) and garlic and spices , and Honey ( I personally just used a small amount of organic can sugar)  sautΓ© over medium heat watching carefully so it does not burn for 10 min until the veggies start to soften and get slightly glazed, then add your Broth.
  Allow all the veggies to cook in the broth over medium heat until the veggies are done ( don't over cook the veggies) and then add to a Blender and blend until smooth.

 for the Tahini add some to the Top or you can use Annie's Green Goddess Dressing and put a few lovely drizzles over the top or for HOMEMADE Tahini see the recipe Below :

Tahini Recipe
1 cup of Sesame Seeds
2-4 Tab of Neutral Oil ( Like olive, or canola , or grapeseed)
Toast the seeds in a flat skillet for 5 min , stirring them allot so they don't burn. Once toasted , about 5 min , set aside and let them cool for 30 min.
( I like To add a few pinches of salt to it too)
Using your Food Processor or Blender add the cooled seeds and add the oil , 1 TAB at a TIME , BLEND UNTIL it forms a nice paste.
You can store it up to 1 month in the fridge covered.


LEMON Tahini Dressing
2 garlic Cloves
1/2 lemon juiced
1/4 cup of Olive Oil 
salt and pepper to taste
Parsley, dried 1 tsp
Cumin 1/8th Tsp or more depending on your taste.
1/2 tsp Coriander
OPTIONAL - sweetener of choice I add a pinch of Organic Cane Sugar to balance everything out.

Tomato Free Pasta or Veggie or Dip Sauce

Tomato-less Pasta or Veggie  Sauce
 I try to use Organic or local veggies and fruits as possible I hope you enjoy this as much as we do!

Ingredients:

1 tablespoon organic extra virgin olive oil or Earth Balance or Coconut Oil
2 yellow onions, chopped ( If Tolerated )
if Not Like me i cant so I use 2 green Onions !
6 garlic cloves, minced
1 pound carrots, chopped
1 medium beet, chopped
2 Tsp of Organic Cane Sugar
1 cup water
1 teaspoon sea salt
2 tablespoons fresh lemon juice
1 Organic apple
1stp of Cumin
2 Tsp of Tumeric
Fresh Basil and Fresh Flat Leaf Italian Parsley

Directions:

Melt the your choice of oil  in a large pot over medium heat, and saute the onions  or green onions , until they are tender and golden, about 10 minutes. Add in the minced garlic and saute until fragrant, about 1 minute. Add in the carrots, beet, and water and bring the mixture to a boil. Cover and lower the heat to a simmer, cooking until the carrots and beets are fork-tender, about 30 to 40 minutes.
Carefully transfer the mixture to a high-speed blender, add the salt and lemon juice and spices and fresh herbs  , and blend until smooth. (Be sure to cover the vent in the lid of your blender with a dishtowel to prevent the top blowing off from the pressure of blending hot liquids!) Taste the sauce and adjust any seasonings, as needed, including a dash of oregano and basil, if you like! You can also add additional water, if you’d like a thinner sauce.

Serve warm over your favorite vegetable or pasta dish, Breadsticks , Dip  and enjoy!

 I wanted to start my Blog Post for November 19th, 2016 this way  because I feel it speaks very true to its word for me in regards to " And a Time "  "Gods" Timing " ,Not my own , It has been a very long hard road for me but God has seen fit for me to travel in it so in that I rejoice because He has always and will ALWAYS be with me !!
    I am praising God to the highest as After 20 yrs of deep suffering and anguish I have finally found THE KEY  part of my "Medical Puzzle piece " .........................................
review we already know about :


I have two kinds of Lupus Systematic and Antiphospholipid Syndrome (Hughes Syndrome) ,Hashimoto's as well as Sjolgrens Syndrome, Tieze Syndrome and inflammatory arthritis and Fibromyalgia #IBS c Gastric Re-flux Disease . environmental and food allergies , Endometriosis , cyst's on ovaries & Liver.

And also finally getting the help I need from  and an horrific horse accident & other things, God has blessed me with an amazing Myofacial Release Practitioner , life changing ! Way better than Physical Therapy.
   & Thanks to a new Dr. ,My Nautropath and my Know How ( God has blessed me with) and my Cooking and baking, Essential Oils and natural supplements I am on my way!!!

     I went in for surgery to remove my gallbladder and was scoped first ! Praising God for that saved my life if they would of operated i would of bled to death , I have Horrific To numerous to count Bleeding Ulcers from throat all the way down to my intestines , i am now starting Month #2 of healing ! It will take a year or longer to heal .
  I really do believe once i get this handled and healed I can hit all the other auto immune diseases into remission I am happy to report My Hashimotos has been in remission for about 6months ! :D

  So as you can see I have allot to be Thankful about !!!

 In Celebration of life and the Upcoming Thanksgiving Time with family and friends Kids and I finished our Thanksgiving gathering today!
Met my Bestie at Our local Farmers Market!
& then the kids and I Jetted Down to our Local Health food store !

I wish the photo was better but the Light in our Tiny Apartment is not so good but we got all Organic , Collard Greens, Butter Lettuce , Celery, Leeks , Rainbow-chard, Carrots, Purple Cauliflower,m Romanesco Broccoli ( Roman Cauliflower) , Red Garlic, Broccoli , Round carrots !!! so cute !

JoAnna Gluten Free's Chef's Soulful Recovery Soup

JoAnna Gluten Free's Chef's Soulful Recovery Soup (Or JoAnna's Indonesian Recovery Soup

This soup is amazing, healing and also very kid friendly! As a mom of 4, my kids love it. It gives you so much of an auto Immune boost when you are feeling down, getting sick or already really sick.
. There is also a Paleo/Gaps Version ( pretty much omit the pasta and if wished used sweet potatoes) .


I am improving a smaller portion recipe so double it for a fuller stock pot. Use ORGANIC ingredients when possible!

5 to 6 cups of Homemade Stock (here is a link to mine): Homemade Stock and Remouillage
3 Tab of Olive oil or Bacon Grease

3 cups of Left over Roast Chicken OR 2 chicken breasts
1 whole onion (optional; we don't use)
2 inches of fresh ginger
1 inch of fresh turmeric 
1 nice bunch of fresh parsley 
1 nice bunch of fresh thai basil or regular basil 
6 stalks of celery
3 to 4 huge chard leaves
5 large carrots 
6 garlic cloves 
2tsp of dried turmeric
1Tsp of Cumin

3 to 4 green onions (for topping)
sea salt and fresh cracked pepper 
*If you are not grain free, add 1 and 1/2 cups of dried pasta shells or noodles, whichever you like to use. Tinkyada is my favorite brand. You may also use sweet potatoes :)

First I do all the prep by cutting up all of the veggies and herbs.

Take a Medium Stock Pot and add your grease or oil. Add the carrots, celery and onion if used. Steam a bit and add salt and pepper.

Next you'll add the garlic, turmeric, ginger and the dried herbs then add in the chard and already roasted chicken. If you are adding the pasta or sweet potatoes, pour in the broth and turn the stove on high to boil the noodles. If you are leaving the pasta out, pour the broth in and turn the stove to medium to simmer the soup.

When the pasta or sweet potatoes are done (Al-dente PEOPLE!) LOL,
add the fresh basil and parsley and stir. Remove from the heat and cover for 5 minutes.

Get your freshly made gluten free bread and salad with homemade ranch dressing ready and get to eating! 
Oh and don't forget to add the freshly cut green onions, YUMMY!

Lovely Fall Day

Its a Lovely Fall Afternoon here in the Beautiful Pacific Northwest , the trees are covered in beautiful colors and the sun is warm and shinning,  The older kiddos decided to start building some fun stuff, and my youngest helped me in the Kitchen  :)

I also collected a few items from the garden.

Now that is one Huge Jalapeno Pepper!! No greenhouse either ! :)
