so when she requested another "Frozen Themed Party " I though a nice Tea party Frozen Themed would be nice :) So thats what we did , with of course handmade decor and food invited and made by me :) My Little gal was so pleased!

JoAnna's Gluten free, *Allergen Free Vanilla Anise Cake
This cake is very reminiscent to Italian Pizzeles :) This cake is dedicated to my Sweet Youngest Miracle Daughter Gabriella , Happy 3rd Birthday !! (March 28th 2015)

* Free of many allergens (or at least mine and i have quite the Long list ) lol.
1 cup Sweet Brown Rice Flour
1/2 Cup Millet Flour
(if using regular flour just use 1 1/2 cups of organic flour) .2/3 cup of Tapioca Starch
1 tap Xanthum Gum ( omit if using regular flour)
1 Tab of Baking Powder
1 tsp of baking soda
1/2 tsp of sea salt
2 Tsp of Cream of Tartar
1Ta1/2 TO 2 TAB b of Star Anise (ground to a powder I use my Coffee Grinder)
1 cup of Stevia in the Raw
1/2 cup of 100 %Pure Honey
1 cup Xylitol derived from Birch or 1 cup organic cane sugar , or organic coconut sugar.
4 eggs ( use 3 if using duck eggs like I do)
1 cup ]Dairy free milk and I add 2 tsp of raw apple cider vinegar let sit and it makes a mock Buttermilk. (or use real Buttermilk if tolerated)
Fresh Zest of Choice - Zest from one of the following, Myer Lemon, Orange, Lemon, Blood orange or Lime or Grapefruit.
1 cup of Earth Balance Melted (or if u can have dairy use butter)
2 Tsp of Real Vanilla Extract
( In the Cupcake recipe I did not add the fresh fruit to the dough but in the Cake Photo Above I did if desired - add The fresh organic Strawberries and more strawberries for Decoration !
If using mock buttermilk mix that first so it has time to "culture it". Melt your Earth Balance (butter) .
Mix your dry Ingredients together in a large bowl set aside.
In your Mixer Cream the Eggs and Sweeteners and zest then add everything liquid but the earth balance, slowly start mixing in , in intervals the dry mix and the melted Earth balance until incorporated.
Place in greased and flour dusted cake pans or use cupcake liners if making cupcakes :)
350 for 20-25 min or more depending on your oven. *Ovens temperatures Vary.
Cool - Frost If Desired .
Here is my Frosting Recipe
Strawberry Frosting (Frosting on the healthier side)
Now we normally do not use organic raw cane sugar but this is a birthday and we once in awhile will use organic cane sugar) 1/2 ( or more depending on how much you want) or washed, cut strawberries ( small cubes)
1/2 Tsp of Raw Organic Cane Sugar
1 1/2 cup of Earth Balance
1tab of Vanilla extract (pure)
1 1/2 cups of Homemade powdered sugar (Easily done by taking organic raw can sugar and a cup or so at a time in your coffee grinder or Vita Mix and pulse till powdered ( u can also if desired a tsp of Tapioca flour or Arrowroot if desired )
1 Cup or arrowroot or Tapioca Flour.
Mix all ingredients but the fresh strawberries , in your mixer with the whisk attachment until desired thickness ( I did tend to find i had to add more powdered sugar with the weather changes and such )
Apply to your baked goods as desired :)
