JoAnna's Rocki'n Kimchi

Hello all here is my Rock'in Kimchie Recipe,  everyday staple in our home!



Health Benifits of Kimchi:
Fermented foods are a really important part of our diet and have been used in many cultures as a way to preserve foods and make them more digestible. Why are fermented foods important? Here's the deal. We all have microflora (bacteria) in our intestine which is absolutely necessary to keep us healthy. In the body, there is "good" bacteria and "bad" bacteria and it's important to keep the "good" bacteria thriving. Fermented foods contain populations of the "good" bacteria that help to keep the microflora balanced. This is necessary because antibiotics are so prevalent in our world (especially in modern agriculture production) and they kill the bacteria in your body, regardless of whether it is "good" or "bad."

Hello all here is my Rock'in Kimchie Recipe, Its kinda a mixture of Korean and non-traditional, using Sea Salt instead of Vinegar, I have posted allot of variations too so make it to suit your taste buds, But above all MAKE IT!!!!!  :) its soo good and I everyday staple in our home!

I find that Organic Veggies Ferment allot better, But of course if you cant find everything Organic that is ok, Try to do local all natural if you can! :)

Apple-Potato Hashbrowns


Apple Potato Hashbrowns (with variations)
(servings one)





1 Small Potato, Grated (this can be done with sweet potatoes but cook at and even lower setting)
1/2 your favorite apple, grated
SQUEEZE THE EXCESS LIQUID OUT OF THE POTATOES AND APPLE


Coconut Oil about 1 Tsp.
S&P

Optional: I also Love adding some Shredded Fresh Raw Zuchinni :D

Heat up a medim, non- stick pan to medium low add tsp or  more of coconut oil, melt and then add your grated potato and apple, sprinkle alittle sea salt and pepper, cover with a lid for around 3 min (check the bottom if brown) Flip, I flip the entire thing with the pan, but Use a spatula if u wish :) cook the other side till brown.

Place on pate sprinkle with alittle more sea salt and enjoy!!!

*there are so many ways this can be do with diffrent ingredients like celery root, zuchinni and so forth! Enjoy!

Happy Tuesday, October 02/2012

Good Morning all!! Happy Tuesday! :)
Breakfast : Coconut -Apple Hashbrowns,Maple CHicken Sausage, Fried Duck egg (in coconut oil) , side of Kimchie (not shown lol) , and crisoy fresh apple! :D and a nice cup of Organic Locall roasted Fair Trade Coffee!



 I have company coming very soon so Im gonna finish eating and then mor cleaning the menu is:
*Asian-Ginger-Citrus Grilled Chicken
* Homemade Fries

*Steamed Cauliflower with a (vinegar free) Peppercinni Vinagerette
& for dessert Chai Pumpkin Spice Snickerdoole Cookies! :)

So Its October already can you really beleive that i cannot!! lol hahaha

So Im  not stressing! I tried to do the Photo a day last month and didint finish , I did really try so Im trying again!!! Hope I can complete an entire month that would be awsome!!!
 




DAY ONE: WHERE YOU STOOD

And this is where i stood i, was taking pics of the kids and was like Oh right i have to take a pic for my photo of the day!!! :D I
remembered!

DAY TWO: LUNCHTIMEWell lunchtime today was super special , because I had a dear childhood friend come out (she lives in New York now) with her husband and son! It was such a joy to see them and visit with them , its been so long!!! I love you Anna! :D *Unfortuanly I didnt not have time admist everything to take a picture of our feast but we had: Asian-Ginger-Citrus Grilled Chicken
* Homemade Fries
*Steamed Cauliflower with a (vinegar free) Peppercinni Vinagerette

& for dessert Chai Pumpkin Spice Snickerdoole Cookies! :)

So instead since i did not get a chance to snap some pictures , i will post a pic of our table decorated for The Fall xooxo :D JoAnna :D
