Follow my blog with Bloglovin

I made these divine treats for the Mad Hatter Dinner Party/Baby Shower I hosted last month, They were a Huge hit and I had many dear friends asking for the Recipe right away , so here it is !
These are great Appetizer , or for a snack and even for breakfast along with eggs and so forth honestly anytime is a good time to Eat JoAnna's Heaven Covered Bacon Wrapped Pineapple! :D ;) ENJOY!
Organic Homemade Sticky Brown Sugar1 Cup of Organic Sugar
8 + Tab of UN-sulphured black strap molasses ( + means u may need more)
in a bowl mix the two ingredient together, u are wanting this to be super sticky , so mix well and if u find that its not dark in color and sticky please add more molasses.
when incorporated set aside .
{{photo coming soon}}

Refined Sugar Free Version -
just add 100% pure honey or 100% Pure Maple Syrup ( or mix the honey and the maple syrup - just add enough to cover the bacon in the bowl and then proceed with directions below .
For 1 tray you will need half of a pack of Bacon
for 2 full trays ( which I recommend )

Cut the bacon in 1/2 . In a medium size bowl add the bacon and if using half 1/4 cup of your Sticky Brown Sugar. If using a whole package start with a 1/2 cup of brown sugar and add more if need be. (  can't abide waste  LOL ) .
And coat all the Bacon as best as you can with the sticky goodness ! :D

Cut your Fresh Pineapple ( or I am sure if not available canned chunk pineapple can be used). Cut into Chunks.

Line your cookie sheet with parchment paper ( foil is ok but it tends to stick to foil more easily) OR I love to Use my big Cast Iron Pan.
take a slice of coated bacon and lay flat , place your pineapple chunk near the end towards u and wrap it up. lay on sheet and repeat until all the pices u want coated are coated.
BAKE in a preheated oven for 375 - 10 min or until the bacon crisp's up a bit ( not too much mind u) and be careful ITS HOT! Try to have patience and let cool a bit before u devour em  ;)

First do :EGG RE-PLACER
(For Egg Re-placer use 1 Heaping tablespoon of Flax seeds or Chia Seeds (that were previously ground up in your coffee grinder, add the ground flax meal into a glass measuring cup and add 2 1/2 TAB of VERY WARM water, let sit for 10 min give or take till it gums up - walla vegan eggs lol :)  or you can USE Energy-Foods Brand Egg Re placer.

Second
Proof your YEAST :
2/3 cup of (filtered water ) Warm about 110degrees. 1 tab of  Active Dry Yeast

2TAB OF Raw Agave Nectar  OR
2 Tab of Honey Only if u wish it not be VEGAN

3RD Mix Dry Ingredients in a Bowl
1/2 cup millet flour ( or u can use Teff)
1/4 Cup Sorghum Flour
1/4 cup Tapioca Flour
1/4 cup Arrowroot

5 tab of oatmeal flour ( make sure its labeled gluten free) I just use my Ninja Blender or u could use your Coffee Grinder.
1 tsp of xanthum gum

1/2 tsp of sea salt
1 Tab of Honey or Stevia in the raw to add a bit more touch of sweetness (your preference) .
1 1/2 tsp of Cream of Tartar
1 1/2 tsp of baking powder
1 tsp of baking soda

1 tsp of Garlic Powder - more if u wish
1 tsp of Onion Powder- more if u wish
1 tab of dried chives

Using your Mixer of Choice  I have a Kitchen Aid , Combine wet ingredients into Mixer, slowly add in MIXED dry ingredients , Mix on medium speed for 3 min.

{{Mince Fresh Rosemary}}
also u can top with thinly sliced fresh tomato before baking :D

Grease a 8x8 with coconut or earth balance , Place parchment paper in the pan and then grease over the parchment. Sprinkle a bit of Oat grits (coarsely ground gluten free oats - optional)
Add the Batter to the Prepared pan and spead evenly , Use a WET spatula to even the top
(may have to dip the spatula in water a few times to achieve this.  Sprinkle with Fresh Rosemary and Sea Salt.
Let rise in a Dry Warm place for 45 min.

Place in a 400 degree Oven, 6 min into baking time , drizzle a tab or so of organic extra virgin coconut oil or olive oil over the top of the bread, continue baking until golden brown and the toothpick comes out clean.
rough estimate is 34 to  45min baking time. but the toothpick test always works best me thinks :)

Apple Sage& Rosemary Venison in the crock pot

Well I wanted to share my recipe I made for St.Patty's day , No i know its not a authentic Irish Dish , but I just had to use what i had on hand, and a good friend gave us a small venison roast.
I love venison , and if  you are not liking the "gamey flavor" as people put it then you will adore this one beacause there was no gamey taste... and remember i cannot have onions and even without them it was divine :)

1 small venison roast
3 garlic cloves
2 stalks of organic Celery cut into about 2 inch sizes

1 can or bottle of Izze Sparkling Apple+added like 1/4 cup of water. or 1cup 1/2 of stock of choice Try my homemade stock here : homemade-stock-aka-compost-stock
4 + sage leave clusters *or bunch
2 Large stems of fresh rosemary
1/2 lemon
8 carrots, cut about 2 inch sizes
salt & pepper
throw it all in the crock pot for 9 hours on high....
Then Feast! :)
**Save the dripping :)
If you wish to make a gravy or reduction.

(
the reduction is gluten free, but is not gaps or scd but it is paleo if you follow the direction but just use arrow-root starch or tapioca. which some on the Paleo diet can tolerate. if not don't thicken it and just use the sauce or blend in blender with cooked onions and carrots to make a somewhat think "gravy".

2 tab of your butter substitute *i used earth balance
melt that and add 4 Tab of my My Gluten free Flour Mixes  mix , mix well with a whisk , take your dripping and put a strainer over the top of the pan and pour the drippings and so the strainer can catch all the bigger bit from the venison.
, remove strainer and whisk quickly , it should thicken up immediately  if not bring to a boil and it will ;) if you need to add anything like a small squeeze of braggs amino acids do so , just taste it to your liking.

Good Served with..... (Not scd & paleo friendly, only allowed on the advanced gaps if tolerated)

JoAnna's Chocolate-Fudgy-Vanilla Covered Raisins

JoAnna's Chocolate-Fudge-Vanilla Covered Raisins

I am so happy to show you this FAST AND EASY recipe , Its so nice to have a few nice and fast and easy recipes that one can do, when one simply makes everything from scratch this is a REAL TREAT!

Talk about convenience! :)  :)

*****

You will need:
1 cup Organic Raisins (1 cup and 1/4 depending how much raisins u like i use 1 1/4 cups)
3Tab of Earth Balance or Coconut Oil
(*remember I can use coconut products now so I use what the company Earth balance offers, for some reason I can use some of there PALM OIL , i dont know why if that's because its mixed with other different oils.)
1 1/2 tsp of Pure Vanilla Extract
10ounces of your favorite chocolate chips or chunks or chocolate of choice - I use Enjoy Life Brand because its GLUTEN AND NUT FREE *MADE IN A DEDICATED NUT AND GLUTEN FREE FACILITY!!! :D :D YES ALAS IT DOES CONTAIN SOME EVAPORATED CANE JUICE, But is the only chocolate i can find that's made in a nut free and gluten free facility. and Its DAIRY FREE AND SOY FREE as well. ;D

*Of course a wonderful Gluten free Liquor would be wonderful added as well :D and to change up the Flavors :
add Essential oils :)

about 5 to 6 drops :) Grapefruit, Lemon , lime, Rose , so forth :)

**PREP A COOKIE SHEET OR TRAY AND PUT DOWN SOME WAX PAPER SO THE CHOCOLATE DOES NOT STICK WHILE HARDENING.

In your Double Broiler ( I just use a pan with a glass or Stainless Steel bowl that i find fits well. Bring water to a boil turn down, make sure the water isn't touching the glass bowl.  add your Earth balance or Coconut Oil, melt it and add the chocolate , with a spatula mix thoroughly and keep mixing with a spatula until chocolate is melted add the raisins and the vanilla Incorporated it all up and then take a spoon the size of your  choice and spoon the chocolate mixture and
form into the shape desired and put it down on your wax paper tray.

wait if you can till they harden and enjoy!! THEY ARE SO SO GOOD!

JoAnna's Rocki'n Kimchi

Hello all here is my Rock'in Kimchie Recipe,  everyday staple in our home!

Health Benifits of Kimchi:
Fermented foods are a really important part of our diet and have been used in many cultures as a way to preserve foods and make them more digestible. Why are fermented foods important? Here's the deal. We all have microflora (bacteria) in our intestine which is absolutely necessary to keep us healthy. In the body, there is "good" bacteria and "bad" bacteria and it's important to keep the "good" bacteria thriving. Fermented foods contain populations of the "good" bacteria that help to keep the microflora balanced. This is necessary because antibiotics are so prevalent in our world (especially in modern agriculture production) and they kill the bacteria in your body, regardless of whether it is "good" or "bad."

*kid approved!  ;)
Hello all here is my Rock'in Kimchie Recipe, Its kinda a mixture of Korean and non-traditional, using Sea Salt instead of Vinegar, I have posted allot of variations too so make it to suit your taste buds, But above all MAKE IT!!!!!  :) its soo good and I everyday staple in our home!

I find that Organic Veggies Ferment allot better, But of course if you cant find everything Organic that is ok, Try to do local all natural if you can! :)
