JoAnna Gluten Free's Chef's Soulful Recovery Soup

JoAnna Gluten Free's Chef's Soulful Recovery Soup (Or JoAnna's Indonesian Recovery Soup

This soup is amazing, healing and also very kid friendly! As a mom of 4, my kids love it. It gives you so much of an auto Immune boost when you are feeling down, getting sick or already really sick.
. There is also a Paleo/Gaps Version ( pretty much omit the pasta and if wished used sweet potatoes) .


I am improving a smaller portion recipe so double it for a fuller stock pot. Use ORGANIC ingredients when possible!

5 to 6 cups of Homemade Stock (here is a link to mine): Homemade Stock and Remouillage
3 Tab of Olive oil or Bacon Grease

3 cups of Left over Roast Chicken OR 2 chicken breasts
1 whole onion (optional; we don't use)
2 inches of fresh ginger
1 inch of fresh turmeric 
1 nice bunch of fresh parsley 
1 nice bunch of fresh thai basil or regular basil 
6 stalks of celery
3 to 4 huge chard leaves
5 large carrots 
6 garlic cloves 
2tsp of dried turmeric
1Tsp of Cumin

3 to 4 green onions (for topping)
sea salt and fresh cracked pepper 
*If you are not grain free, add 1 and 1/2 cups of dried pasta shells or noodles, whichever you like to use. Tinkyada is my favorite brand. You may also use sweet potatoes :)

First I do all the prep by cutting up all of the veggies and herbs.

Take a Medium Stock Pot and add your grease or oil. Add the carrots, celery and onion if used. Steam a bit and add salt and pepper.

Next you'll add the garlic, turmeric, ginger and the dried herbs then add in the chard and already roasted chicken. If you are adding the pasta or sweet potatoes, pour in the broth and turn the stove on high to boil the noodles. If you are leaving the pasta out, pour the broth in and turn the stove to medium to simmer the soup.

When the pasta or sweet potatoes are done (Al-dente PEOPLE!) LOL,
add the fresh basil and parsley and stir. Remove from the heat and cover for 5 minutes.

Get your freshly made gluten free bread and salad with homemade ranch dressing ready and get to eating! 
Oh and don't forget to add the freshly cut green onions, YUMMY!
