HOW TO GO GLUTEN FREE , A comprehensive Guide To Going Gluten free ( keep checking back for updated and continued Imformation)

How to go gluten free.
So you have either been instructed by your doctor , or a friend or have done re-search on your own and you must go gluten free, Don't panic I know its quite a bit to take in,
What was that? Dairy free and nut free too! The list goes on ?
If it does than this is the place for you .

Keep in mind if you wish to get tested via testing.
Starting the gluten-free diet before being tested for celiac disease makes an accurate diagnosis difficult.

I will talk about how to get diagnosed and all the information that goes along with that.

Going Gluten free ( if the whole family is going gluten free)

First I would start with going through your kitchen and pantry and remove UN-wanted gluten, give it to another family if they can use it ,some ppl do that and some friends hand them some $$ to help get them started on the gluten free path .

What are items I need to Eliminate from my kitchen / Pantry and Freezers ?

1) Remove all Gluten products : Foods/products that may contain gluten:
Beers, Ales, Lager, Breading & Coating Mixes, Brown Rice Syrup, Communion Wafers, Croutons, Dressings, Drugs & Over-the-Counter Medications, Energy Bars, Flour & Cereal Products, Herbal Supplements, Imitation Bacon, Imitation Seafood, Marinades, Nutritional Supplements, Pastas, Processed Luncheon Meats, Sauces & Gravies, Self-basting Poultry, Soy Sauce or Soy Sauce Solids, Soup Bases, Stuffing’s, Dressings, Thickeners (Roux), Vitamins & Mineral Supplements

Stay away from : Wheat (Einkorn, Durum, Faro, Graham, Kamut, Semolina, Spelt), Rye, Barley and Triticale.

Cutting boards ?
Pots and Pans and Knives and Silverware = I find that these item's if properly cleaned with be okay , but if you feel safe or of course if you have a Celiac that has a life threatening allergy to it then best to change all those out too.


How about alcohol?
Distilled alcoholic beverages and vinegars are gluten free. Distilled products do not contain any harmful gluten peptides. Research indicates that the gluten-peptide is too large to carry over in the distillation process. This process leaves the resultant liquid gluten free. Wine and hard liquor beverages are gluten free. Beers, ales, lagers and malt vinegars are NOT gluten free. There are Many Gluten-free beers available .

Remember – Wheat Free is NOT GLUTEN FREE Spelt, rye or barley-based ingredients that are not gluten free. Spelt is a form of wheat.

What you can have – Fresh Meats – Beware of Added Broths and such , broths can contain gluten ! Fruits, Veggies, Beans, Seeds , Nuts, Plain Tofu ( Avoid Tofu with flavoring and such as they may contain Soy Sauce and other items that contain Gluten )
I love eating Seasonally more on that here __________________.

Grains & Starches allowed:
Rice Sweet Brown, White Rice, Brown Rice (and of course we know there are many different kinds of rice , red , black so forth , Corn (Maize), Soy, Potato, Tapioca, Beans, Garfava, Sorghum, Quinoa, Millet, Buckwheat, Arrowroot, Amaranth, Teff, Montina, Flax and Nut Flours Mesquite Flour.





Condiments You can have (if in doubt call and re-search yourself they may of revised there product and I did not know about it , I try to keep up with it all , but its no easy lol !!! )
Soy Sauce and Other along that Line :
They do make a Gluten free Soy Sauce and a Gluten free Tamari Sauce Tamari Soy Sauce, Wheat Free, Organic, 10 oz by: San-J (& they are GMO FREE : ).

Kikkoman Soy Sauces do not list peanuts or tree nuts as ingredients, but are there any nuts at the manufacturing plant? The all-purpose Kikkoman Soy Sauce and the Kikkoman Less Sodium Soy Sauce are brewed at the Kikkoman Foods, Inc. plant in Walworth, WI where there are no peanuts or tree nuts ingredients. Please check the back of your label to see where the product was made.
BUT they are not GMO free :(


I actually prefer and use Braggs Amino Acids in place of my Soy Sauce .
Coconut Secret makes a Coconut Amino Acids as well.

Fish Sauce – We Love Using Red Boat Fish Sauce its amazing and Gluten free and , nut free!
Mayo and Mustard – just not the

Mayo : I make my own Mayo Here is My Recipe for Homemade Mayo (I use Duck eggs but you use your egg of Choice)
But if you wish to buy it these brands are safe :

Worcestershire Sauce This is one product I see allot of ppl use in there cooking what I often run into is that they use the reguar familiar brand but that Brand Is NOT gluten free! :(

1) Edward & Sons Organic Vegan Worcestershire Sauce – delicious!!!!! and Vegan too!


2) WanJaShan Organic Gluten Free Worcestershire Sauce - Seasoning, Dressing, Marinading 10 oz
Vinegars : 1. Is distilled vinegar gluten free? Yes, 100% distilled vinegar is made from distilled alcohol and all “pure” distilled alcohol is gluten free. This is true even if the starting material is wheat, barley, or rye. During distillation the liquid from fermented grain mash is boiled and the resulting vapor is captured and cooled. This causes the vapor to become liquid again. Because protein doesn’t vaporize there are no proteins in the cooled liquid.

2. Is all non-distilled vinegar gluten free? Almost, but read ingredient lists carefully. According to The Vinegar Institute, the most commonly used starting materials for vinegar are apple, grape, corn, and rice. If non-distilled vinegar uses .

Pure distilled vinegar is gluten free, malt vinegar is not. Flavored and seasoned vinegars may contain gluten, most typically in the form of malt, so ingredient lists should be carefully read. Essential Oils for Ear Aches and Homeopathic Remedies

So my family has been sick and my poor baby (22month) , Has an earache i did the following with Young Living's Melrose Blend,

She had instant relif! she was not crying , I directions are below and also after I applied around the ear and such I put a cotton ball over and turned on low a heating pad and she layed down on it and watch  a movie she got allot of relif and now she is running around at 11.17pm lol .

I adore Essential Oils I know most of you guys know this , I started using Young Living E.O Since I was 14 year s old they helped me and still help me so much. I used to get double ear infections and man oils are da bomb! :D hahah
She is happy now :D



Essential Oils for Ear Aches

Ear Ache :
Single Oils :
Thyme , Lavender, Tea Tree oil , Rosemary, Helichrysum, Roman Chamomile, Ravensara, Peppermint, Eucalyptus.

Blends (Young Living Names)
Melrose, Purification, PanAway, Thieves (diluted) , Immupower.

Topical Application Dilute 50/50 in warm olive or coconut oil. Apply 2 drops using a cotton swab, apply traces to the skin AROUND the opening of the ear, but not in it!
Put 2-3 drops of the diluted essential oil on a piece of cotton and place it carefully over the ear opening. Leave overnight. Additional relif may be obtained by placing a warm compress over the ear. VIRAL FLEX, massage 1-2 drops on ear lobes and on ear Vita Flex Points of the feet.
THESE can be used for adults too!

Homeopathic Remedies 

Here are some of the common, and truly indispensable, remedies to consider for children with ear infections.
Chamomilla. You can hear the child who needs Chamomilla down the hall and through a closed door. They are uncomfortable and irritable, and they want you to know it. There is something in their cry that puts you on edge; it’s the kind of cry that causes adults to think things like, ‘Would somebody please shut that kid up!?’  The child demands to be carried and screams when put down. They demand this or that, but throw the object of their desire away when they finally get it.  A peculiar symptom I have seen many times is that one cheek may be glowing red, while the other is pale.

Pulsatilla. A child needing Pulsatilla is also tearful, but quite different from the Chamomilla patient described above. Here the cry is usually wimpier, creating a reaction in the surrounding adults of, “Oh, the poor thing!” The child clearly wants sympathy and nurturing. Discharges (such as a runny nose) are usually yellow or green, thick, and bland - not irritating. They typically have little thirst or appetite, and they generally feel better in fresh, open air.

Belladonna. In conventional medical school I remember being taught a memory aid for the patient who has been poisoned with Belladonna [in large,non-homeopathic doses].  It went something like: “Red as a beet, dry as a bone, hot as a furnace, blind as a bat, mad as a hatter.”  These represent some of the characteristic symptoms for Belladonna and are helpful in recognizing its homeopathic  presentation as well.  We think of Belladonna for illnesses with sudden, violent onset. The child is typically hot, red, and dry. The pupils are often dilated and the eyes seem very bright.  Curiously, the head is often hot but the limbs are cold. The nervous system is affected in such a way that the child often experiences twitching or jerking - perhaps in their sleep - and is sensitive to light and jarring. They are often excited and restless.

Ferrum phosphoricum.

*** Listed in the homeopathic materia medica for Ferrum phosphoricum is the comment, “violent earache, acute otitis media when Belladonna fails.” That is, the child needing Ferrum phosphoricum may at first be mistaken for one needing Belladonna.  And this is largely how I have come to think of Ferrum phosphoricum -  similar to Belladonna but less intense. The child is often excited, sensitive to light and jarring - but not to the extent of Belladonna.  They are often red, but not as intensely red; hot, but not as burning; eyes red, but not so bright.  And like Belladonna, Ferrum phosphoricum is commonly indicated in children with earaches.


Hepar sulphuris. Think of Hepar sulphuris when the child is chilly, sweats easily, and often has an accompanying hoarse, barking cough. Discharges are typically thick and yellow, and pains are often sticking (like splinters).

THESE CAN BE USED FOR ADULTS TOO!
Dosage: These remedies are non-toxic and sold over the counter at natural food stores and some drug stores. The commonly found potencies (such as the 6th, 12th, or 30th) will be fine. Given a choice, I usually recommend the 30th potency.

JoAnna's Vegan Scones W/ Choc. Chips & Citrus (optional) (Berry) your choice.

These are a huge hit in my house , they are so easy to make they can be made along a nice breakfast or brunch, or is last min company coming? no problem just assemble and walla , freshly made Vegan, gluten free , healthy scones!!! :D Finish off with a Cup of tea or coffee :D



JoAnna's Vegan Scones W/ Choc. Chips & Citrus (optional) (Berry) your choice . 


Pre-heat 375 oven

1 cup and ¼ cup of (your choice) JoAnna's Gluten Free Flour Mixes (2 kinds) *click 
¼ cup of gluten free oat flour
2tsp of Xanthum Gum
1tsp pf Baking soda
2tsp of Baking Powder
8 tablespoons Spectrum Organic Shortening (or Coconut oil , your choice)
1/2 cup vanilla soy, hemp, or coconut milk- and more as needed
1/2 cup (more or less) You may need more liquid if so add some warm water - it depends on the milk u use some of thicker than others
1tsp of fresh zest of choice (optional)
1 teaspoon lemon juice
4 Tab of Organic Agave Nector or Maple Syrup (or honey if its not needed to be vegan)
¼ (if you want it alittle sweeter add 1/2 instead)  Cup of Stevia in the Raw
1 TAB of ground flax seed , with 3 Tab of Very warm water – let sit until it gels .
1 tablespoon's bourbon vanilla extract

4 Tablespoons rounded tablespoons Enjoy Life Chocolate Chips. (your choice of dark or regular.
3/4 Cup of Berries – blueberry's, Cranberries (add more sweetener) , strawberry's , apples finely chopped (fresh , wash pat and dry, if frozen , take out in advance , defrost and DRAIN , make sure its not too wet or your Scones will turn out soggy.


Mix the dry ingredients together, add the earth balance , by cutting it in with a pasty cutter , until it forms nice wet “clumps” , and the egg re-placer , then the rest of the ingredients , saving the fruit and choc pieces for last. Incorporate well with a spatula but be gentle near the end with the fruit pieces.

MAKE SURE ITS NOT TOO WET!!!

Place on parchment paper , greased with your “oil” of choice , Spread evenly with Spatula , wet if if you need to and put in a pre – heated 375 degree oven for 10 -15 min until golden brown.
Option Iike to cut mine before baking, to do this by wetting the knife and cutting , wet for each “slice” and then put in the oven.

Scones are done when toothpick when inserted comes up clean.

Been an Eventful Weekend , Bountiful Baskets, More Chocolate Goodness Making In Time for Valentines Day!

So it has been rather an eventful weekend , Kiddos and Hubby still sick , i am still struggling with some health nonsense, But along with all the stress's and pressures of everyday life =) hahha I was able to pick up my 2 orders of  "Bountiful Baskets " if you have not heard of them more info here : http://www.bountifulbaskets.org/  

At first I was rather Hesitant , Being a Chef I love picking out my own produce and veggies , I don't know how else to explain it , and I just was not sure if it was going to be worth the $$
when you order the first time there is a first time fee and , I guess after each order there is a 5$? charge for each basket - so my Total this time for my First time Ordering was $42.00.
