JoAnna's Chocolate-Fudge-Vanilla Covered Raisins

I am so happy to show you this FAST AND EASY recipe , Its so nice to have a few nice and fast and easy recipes that one can do, when one simply makes everything from scratch this is a REAL TREAT!

You will need:
1 cup Organic Raisins (1 cup and 1/4 depending how much raisins u like i use 1 1/4 cups)
3Tab of Earth Balance or Coconut Oil
(*remember I can use coconut products now so I use what the company Earth balance offers, for some reason I can use some of there PALM OIL , i dont know why if that's because its mixed with other different oils.)
1 1/2 tsp of Pure Vanilla Extract
10ounces of your favorite chocolate chips or chunks or chocolate of choice - I use Enjoy Life Brand because its GLUTEN AND NUT FREE *MADE IN A DEDICATED NUT AND GLUTEN FREE FACILITY!!! :D :D YES ALAS IT DOES CONTAIN SOME EVAPORATED CANE JUICE, But is the only chocolate i can find that's made in a nut free and gluten free facility. and Its DAIRY FREE AND SOY FREE as well. ;D

*Of course a wonderful Gluten free Liquor would be wonderful added as well :D and to change up the Flavors :
add Essential oils :)

 about 5 to 6 drops :) Grapefruit, Lemon , lime, Rose , so forth :)



**PREP A COOKIE SHEET OR TRAY AND PUT DOWN SOME WAX PAPER SO THE CHOCOLATE DOES NOT STICK WHILE HARDENING.





In your Double Broiler ( I just use a pan with a glass or Stainless Steel bowl that i find fits well. Bring water to a boil turn down, make sure the water isn't touching the glass bowl.  add your Earth balance or Coconut Oil, melt it and add the chocolate , with a spatula mix thoroughly and keep mixing with a spatula until chocolate is melted add the raisins and the vanilla Incorporated it all up and then take a spoon the size of your  choice and spoon the chocolate mixture and
form into the shape desired and put it down on your wax paper tray.

wait if you can till they harden and enjoy!! THEY ARE SO SO GOOD!

A POST ABOUT DUCK EGGS... (Nutrition, Allergy's , Freezing .....)

DID YOU KNOW THAT MOST PPL WHO ARE ALLERGIC TO
CHICKEN EGGS CAN HAVE:




 DUCK EGGS/GUINEA HEN EGGS/ GOOSE EGGS AND OSTRICH EGGS &even Turkey Eggs!
I CANNOT HAVE CHICKEN EGGS BUT CAN SAFELY AND DELICIOUSLY CONSUME, DUCK , GUINEA AND GOOSE, I HAVE NOT TRIED OSTRICH EGGS or the Turkey YET BUT HOPE TO IN THE NEAR FUTURE! :D :D :D

You can image my excitement when i figured this out years ago, so wonderful and such a blessing to able to consume eggs again and in baking and cooking , Yes i do bake and cook without eggs but its so nice to know i can and I do! :D and besides Duck eggs are coveted by the french for there awesome rocking Meringue !!!






Of course have your self check or do a skin test overnight to make sure. :D
Or they do say: "People who are allergic to chicken eggs may be able to eat duck eggs but it depends on the severity of the allergy and what, specifically, in the chicken egg the person is allergic to. Some people are allergic only to chicken eggs, some are allergic to all poultry products and all bird eggs."

Can a person allergic to eggs eat chicken?

In most cases, the answer is yes. Most often the antibodies against eggs identify chicken as non-egg and chicken can be eaten safely. In rare cases, the antibodies find a similarity between the protein structure of chicken and eggs and the child can react to both.

Can a person allergic only to egg white still eat the yolk?

Eggs have two allergenic components with different properties - the yolk and the white. The egg white is the component which causes the most severe reactions. However, it makes little difference which part of the egg a child is allergic to. It is very difficult to separate the white from the yolk without having some parts of each combine. Extremely small amounts can sometimes trigger severe reactions.

Duck Eggs Vs Chicken Eggs: Nutrition

6x the Vitamin D, 2x the Vitamin A, and 2x the cholesterol in duck eggs vs chicken eggs. Duck contains about 75% of the Vitamin E in chicken eggs. Duck eggs reportedly also have more Vitamin K2, Duck eggs also are higher in calories for the same weight quantity, probably due to it's slightly higher fat concentration. Also, keep in mind that the eggs of free-range, pastured animals generally have higher levels of vitamins and higher levels of omega-3 fatty acids. The yolks are darker, yellower, indicating a higher nutrient density.
A 100 gm of duck egg will provide about 185 KCal of energy, compared to 149 KCal of energy provided by a chicken egg. Both types of eggs, match each other in terms of carbohydrate content, while the protein content is slightly higher in the duck eggs compared to chicken eggs. The mineral content of duck eggs is very similar. Both contain selenium, manganese, zinc, copper, potassium, sodium, phosphorus, calcium and iron. The duck eggs contain slightly higher amounts of all these minerals.
Same is the case with vitamin content in both of them. The vitamin content too is similar, but duck eggs have a higher amount of each one of them, which includes thiamin, niacin, riboflavin, pantothenic acid, folate, vitamin B6, vitamin D, vitamin E, vitamin A, vitamin B12 and retinol.
100 gm of duck eggs will have about 3.68 gm of saturated fat, compared to 3.1 gm in chicken eggs. The mono unsaturated fat content is about 50% more in duck eggs as against chicken eggs. The amino acid content profile is also similar for both eggs, but again duck eggs contain more of them. The amino acids included are threonine, isoleucine, trytophan, leucine, methionine, lysine, cystine, tyrosine, phenylalanine, valine, serine, glycine, proline, aspartic acid, histidine, alanine, and arginine. The only minus point that duck eggs have is the considerably higher cholesterol content, compared to chicken eggs. 100 gm of duck eggs will contain 884 mg of cholesterol, compared to 425 mg in chicken eggs.



HOW TO FREEZE DUCK EGGS.
Ok I have mentioned before that Muscovy Eggs are the size of 2 to 3 chicken eggs!!! How Do I ensure that I will have eggs during the OFF LAYING SEASON?
 I FREEZE EM!! Yep that's right easy peasy! here goes!
Can I use A ice cube tray? Not usually with Duck eggs they are too big!! (see size comparison above mentioned). and if u are baking with them after they are frozen u would want to freeze them like one egg at a time.

STEP ONE: Get a Muffin tin, little plastic sandwich baggies, and your duck eggs.

STEP TWO: Place in sandwich baggies - u can use them with or without the zip-lock feature , if u don't have them with the zip-lock feature just twisty tie them I have many times :D

Step Three: Break the eggs place in each in the bags. Close shut get as much air as u can out of them.

Step Four: Place closed bags in freezer and freeze! Once Frozen take out and place all the eggs in a FREEZER Gallon bag!! :D walla Eggs in the winter! :)

To Thaw Simply take the amount u wish and  Defrost in the Fridge or your counter  :D

NOTED: If you have smaller eggs like Chicken or Gunia or turkey u can freeze them in a Ice cube tray like this and then once frozen break em out and place in bags :) Like I said above these are too small for duck eggs :)

I need to do this due to health and Im just needing a break, I have allot of stuff I need to get figured out "healthwise". and just still trying to figure out what i can cannot have right now in this chapter in life...not only is coconut out of the picture but Cinnamon is too :( so sad about that.

RECAP...MOVING FORWARD...PROGRESS..FRUSTRATION

Hello dear Friends I'm sitting down here and writing this with a heavy heart, I'm frustrated is all with my health situation I need time , lots more time and many of you know me as go go go go lol . But alas I need to do whats best for me and my family and so I shall do that, the reason why its hard for me to come up with or make my old recipes is because I am very limited on what i can consume right now , and I'm now on the full gaps diet and still feel stifled and not at all having loads of options, I eat the same things every day here is a list of food 's I eat and I'm only using on occasional fresh herbs not very many dried herbs here is a list of foods I can have right now (I must say not being able to have COCONUT OIL , or coconut products is very very hard to come to terms with....I notice i can have a tiny small amount in my organic whipped earth balance)

Duck Eggs


So you see baking you guys something is kinda out of the question , I still can have on occasion some of my cakes made with earth balance and my gluten free mix but that's just for special occasions....

I don't know if this makes any sense i feel like I'm letting everyone down and  myself down cuz I'm not writ ting and creating what i want...Do I need to change gears...and just plain write about my life journeys with some recipes thrown in as I can have more food choices? Yes you can see this is very hard for me , I absolutely love and adore food and its hates me lol hahah.

 No I know Im doing better than i have been before and I have lots of food choices than i did in the past, when i could only have Organic Turkey Broth. Praise God Im not back to that again!!!

I think I just need time lots of time.. most of you know I have Lupus/Sjolgrens Syndrome/ Over-active thyroid/Anemia Hemocromotosis and i have had one kid one after another.

Been told i would not be able to  have kids , had my firstborn (long hard, hard pregnancy) then I lost 6 precious children after that, then I was blessed with 3 more children (the second born , Jack was a very hard Pregency and I was told my NP and a speacialist in seattle to abort him and that we would both die if i didnt of i would just die anyway, of course i would never abort and My Jack is here with us and safe, then i had my two girls , Eleena (pregnancy was not so bad cuz i was able to take 5 mg of Preginizone helped keep her in andhelped me with pain and managing being pregnant better, and i did the same thing when I was pregnant right after with Gabriella.

I am not going to write my life story here , cuz then we would have an entire book. lol , but I did want to at least touch on this for those who do not know , I do feel like i need to explain myself and i know i dont but i still have a desire to help ppl. Mabey God wants me to switch gears and just write about my health journey and go from there.... I dotn want to loose or leave you all i so do love my blog and my facebook support page for my blog...I also Homeschool my kids and help my husband run our construction business so I feel so streched thin....

Hi i did some calling around this moring to see what turkey's this year are free of Gluten/Peanuts/&Tree Nuts. I forgot to ask about Soy so you may wanna call the prospecitve brand u want and ask if u are concerned about that.

I justa called them and she said free of gluten , tree nuts and peanuts, or really anything like that , she said they were an all-meat faculity! :D
