JoAnna's Gluten Free(Allergen Free) Chai-Snickerdoodle Cookies

Well Dear Friends, Here is my recipe for delicious Gluten Free Chai Snicker doodle Cookies, Now who doesn't like Chai Tea Right? Well who dost like those good old fashion Snicker doodle cookies? Well I was thinking why not combine the two? And Walla!!:D Success on the first try! :D :D**To make them vegan use energy-Foods egg re-placer enough for three eggs.





Gluten-free Chai Snickerdoodle Cookies



Remember to Bring your ingredients to room temperature :) Enjoy!
3 1/2 cups Of My Fool Proof Gluten Flour Mixes

1 tsp ground cinnamon
1 tsp ground cardamom
1 tsp ground cloves
1 1/2 tsp ground ginger
3/4 tsp ground black pepper
2 tsp cream of tartar
1 tsp baking soda
1/2 tsp kosher salt
1 tsp xanthum gum

1/2 cup of earth balance softened
1/2 cup Organic Coconut Oil or organic spectrum naturals shortening
1 1/2 cup Xylitol , derived from birch
1/4 cup of stevia in the raw
**2 large duck eggs
**1 large duck egg yolk
2 tsp vanilla extract

1/4 cup xylitol (I only use the one derived from Birch trees)
1 Tbsp ground cinnamon
Preheat the oven to 350° F
In a small bowl, combine the cinnamon, cardamom, ginger, cloves, cream of tartar, baking soda, salt, pepper, and xantham gum. Set aside.
In a large bowl, beat together the earth Balance, shortening, and sugar's on medium speed. Beat until creamed together well.
Add the eggs, one at a time beating after each addition and scraping down the sides with a spatula. Add the egg yolk and beat again. Add the vanilla and beat again.
Pour in the spice mixture from the small bowl and mix well.
Add the flour mix and beat until smooth.
In a small bowl, mix together the  sugar and cinnamon to roll the dough in.
Roll 1 tablespoon amounts of dough into 1” balls into the

Xylitol/cinnamon mixture. Place on the baking sheets about 2” apart.
I use my Non-Stick Slip mat on most of my baked goods Slip-mate picture here and can be purchased through www.amazon.com .
Then take a fork and flatten them front to side (Like u would making those "peanut butter cookies".. :)



Bake for 12 minutes of until the tops of the cookies start to look nice and golden, but don't over bake them, insert toothpick and if it comes out clean they are done :)

 move them to a rack to cool. AND ENJOY!!!

JoAnna's Gluten Free Light as a Cloud Gluten Free Biscuts

Dear Friends, well here we go here is a surprise recipe!! I will be posting more as soon as I can and please give me feedback!! I am sorry I don't have a camera anymore :( makes me so sad so I had to dig this old photo up of them  :( ......Have a great night all!! :D :D

JoAnna’s Gluten Free Light as a Cloud Biscuits
****


2 ½ cup Organic Sweet Brown Rice (Gmo Free)
2 cups Arrow-root Starch
½ cup Sorghum Flour
2tsp baking powered
2 tsp baking salt
1 tsp cream of tartar
1 ½ tsp. baking soda
2 tsp xanthum or guar gum

½ cup Earth Balance of Choice (or Coconut Oil or Butter depending on your preference and allergies and of course if you use butter then it wont be vegan )
1 ½ cup of coconut milk or water :)
1 Tbsp. Raw Apple Cider Vinegar 

 I use Ener-G Foods egg re-placer ( optional)

1. Preheat oven to 350 degrees

2. In a Large Mixing Bowl thoroughly combine the flours , baking powder, salt and tartar, and xanthum gum.

3. Using your pastry cutter , cut in your earth balance until there are small uniformed balls (or lumps in the flour mixture).

4.Add the coconut Milk, vinegar and beaten egg to the flour and stir until combined.

5. Using a large ice cream scoop (oiled if wished), drop the dough onto you parchment paper of silicone baking mat. Bake @ 350 degrees for about 15 min or until golden brown, insert a toothpick until it comes out clean!

There biscuits are heavenly all by themselves or with earth balance and your favorite toppings or to accompany dinner, they are especially the perfect vehicle for my Incredible Turkey-Sausage gravy!! (Recipe Coming soon for the various Gravies)!!! :D :D

  Spring Bibb Salad with Carrot Curls and Green Onions w/my asian dressing! (my take on C’est Si Bon(French Restaurant here in Port Angeles , Wa. dressing on there Bibb Salad)
***all using what i have ryan just had to pick up the Bibb lettuce :D
