1 cup JoAnna's Fool Proof Gluten Free Flour Mix
1Cup of Stevia ( I used Stevia in the Raw, Brand)
1/2 cup of Xylitol
1/2tsp + 1/4 tsp of Xanthum Gum
1/8tsp sea salt or Kosher
1/4tsp baking soda
1 Tab ground cinnamon
3 large eggs room tempature or egg replacer*
1 Tab ground Espresso
1/2 cup cocoa poweder (i used special dark)
1/3 cup of chocolate chips ( i use enjoy life)
5 cardomon pods
1/2tsp Whole fennel seeds
(toasting intructions below)
1/2 spectrum Shortening
1/4 cup oil of your choice
1 Tab vanilla extract
1/2 of a Bannana
1/2 tsp of orange zest
juice of half of an orange
1. Preheat oven to 350 degrees, lightly grease a 9x9 pan and line with parchement paper.
2. heat a small pan on stovetop add the whole spices and toast, it wont take long you can smell them and make sure you dont burn them, then add them to your spice grinder, i have a seperate coffee grinder for all my spices. Tip: If you dont have time to take the cardomon out of the pods just blend it up and then grab a very find strainer and shift the spices through there takes a step out of the process. there will be some spices left over.
3.In a medium bowl combine all the dry ingredients add 1/8tsp of your toasted spice blend. Mix all together. except for the chcolate chips and Sugars. Set Aside.
4. In your Mixer add the Shortening and the sugars and mix till combined, slowly add in one egg one at a time, or add egg replacer. add vanilla, bannana, orange zest, oil, and orange juice. Batter will be thick and fudge like.
5.Spread batter evenly into your prepared pan, smooth the top with a knife.
6. Place pan in your preheated oven and bake for 24 to 28 min or until the center comes out clean, Try to let it cool before slicing I know I didnt tonight lol! :D
*and of course make sure all your ingredients are gluten free~~~
