JoAnna's Gluten Free Challah Bread ( Non Braided)

HAPPY EASTER!!!
 Easter is upon us and no meal would be complete without gluten free, delicious challah bread!! ( nut and peanut and chicken egg free & more) !
I hope to try a "Braided Version" But not sure with my incredibly busy week If I will be able to do that, I actually just got done teaching a great gal how to bake gluten free, and make my AMAZING Nut free, Dairy Free VEGAN Pesto!

Challah Bread

Gluten free, nut free, chicken egg free, buckwheat free and more!

1 cup of sweet brown rice flour
½ cup of millet
½ cup of Oat Flour ( gluten free, I just make my own by taking Bob's Red Mill Gluten free Oats , put in your blender or coffee grinder and WALLA FLOUR!

1 tab ½ of Dry yeast (PROOF)
1 ½ cups of WARM WATER
1 TAB OF HONEY for the water ^^
1 and ½ cups of Tapioca Flour
¼ cups of Arrowroot
1 TSP OF Xanthum Gum
1 tsp of salt
4 Tablespoons of  Honey
1 tst of Vanilla extract
3duck eggs + I yolk or 4 chicken eggs with 1 Yolk.

It will look like cake batter once beaten all together for 3 min.

Place in "Bunt Cake Pan" or whatever Shape u want it and let rise in a dry warm spot for 45min. (cover with oiled saran wrap   )

bake for 45 min , in a pre-heated oven.
Finished when tooth pick comes out clean and if the top seems to be getting too dark , cover lightly with foil near the end of the bake. :)

Delicious Dehydrated Myer Lemon Glazed Strawberries


Dehydrated Myer Lemon Gal-zed Strawberries











March 2014 - I got a great Deal on 8LBS of Organic Strawberries from Bountiful Baskets!
I took 4LBS of it and made these Delicious Dehydrated  Myer Lemon Glazed Strawberries.
Cant wait to put them In My Homemade Nut Free Gluten free Granola !! :D  and cookies and everything whahoo I shall definitely have to make more!!! lol

This is for 4LBS of Organic Strawberries.
1 Organic Myer Lemon
1/4 cup total or more of zevia in the Raw or
1/4 tsp or more of Liquid Stevia. Or Honey.

Slice the Strawberries in the same uniformed sizes.
put in a good size bowl.
I use an Excalibur-3900B-Deluxe-Dehydrator-

After you are done slicing them , Coat with Myer lemon Juice and Stevia of choice or sweetener of Choice.
PLACE on Trays
Dry for 6-8 hours ( If using The Excalibur put on 135)

Believe me Strawberry Shortcake will be jealous cuz your house smells so divine!! hahhaa

JoAnna's Rocki'n Kimchi

Hello all here is my Rock'in Kimchie Recipe,  everyday staple in our home!



Health Benifits of Kimchi:
Fermented foods are a really important part of our diet and have been used in many cultures as a way to preserve foods and make them more digestible. Why are fermented foods important? Here's the deal. We all have microflora (bacteria) in our intestine which is absolutely necessary to keep us healthy. In the body, there is "good" bacteria and "bad" bacteria and it's important to keep the "good" bacteria thriving. Fermented foods contain populations of the "good" bacteria that help to keep the microflora balanced. This is necessary because antibiotics are so prevalent in our world (especially in modern agriculture production) and they kill the bacteria in your body, regardless of whether it is "good" or "bad."

Hello all here is my Rock'in Kimchie Recipe, Its kinda a mixture of Korean and non-traditional, using Sea Salt instead of Vinegar, I have posted allot of variations too so make it to suit your taste buds, But above all MAKE IT!!!!!  :) its soo good and I everyday staple in our home!

I find that Organic Veggies Ferment allot better, But of course if you cant find everything Organic that is ok, Try to do local all natural if you can! :)

JoAnna's Gluten Free Light as a Cloud Gluten Free Biscuts

Dear Friends, well here we go here is a surprise recipe!! I will be posting more as soon as I can and please give me feedback!! I am sorry I don't have a camera anymore :( makes me so sad so I had to dig this old photo up of them  :( ......Have a great night all!! :D :D

JoAnna’s Gluten Free Light as a Cloud Biscuits

2 ½ cup Organic Sweet Brown Rice (Gmo Free)
2 cups Arrow-root Starch
½ cup Sorghum Flour
2tsp baking powered
2 tsp baking salt
1 tsp cream of tartar
1 ½ tsp. baking soda
2 tsp xanthum or guar gum

½ cup Earth Balance of Choice (or Coconut Oil or Butter depending on your preference and allergies and of course if you use butter then it wont be vegan )
1 ½ cup of coconut milk or water :)
1 Tbsp. Raw Apple Cider Vinegar 

 I use Ener-G Foods egg re-placer ( optional)

1. Preheat oven to 350 degrees

2. In a Large Mixing Bowl thoroughly combine the flours , baking powder, salt and tartar, and xanthum gum.

3. Using your pastry cutter , cut in your earth balance until there are small uniformed balls (or lumps in the flour mixture).

4.Add the coconut Milk, vinegar and beaten egg to the flour and stir until combined.

5. Using a large ice cream scoop (oiled if wished), drop the dough onto you parchment paper of silicone baking mat. Bake @ 350 degrees for about 15 min or until golden brown, insert a toothpick until it comes out clean!

There biscuits are heavenly all by themselves or with earth balance and your favorite toppings or to accompany dinner, they are especially the perfect vehicle for my Incredible Turkey-Sausage gravy!! (Recipe Coming soon for the various Gravies)!!! :D :D
