JoAnna's Chocolate-Fudge-Vanilla Covered Raisins
I am so happy to show you this FAST AND EASY recipe , Its so nice to have a few nice and fast and easy recipes that one can do, when one simply makes everything from scratch this is a REAL TREAT!
Talk about convenience! :) :)

You will need:
1 cup Organic
Raisins (1 cup and 1/4 depending how much raisins
u like i use 1 1/4 cups)
3Tab of Earth Balance or
Coconut Oil
(*remember I can use coconut products now
so I use what the company Earth balance offers, for some reason I can
use some of there PALM OIL , i dont know why if that's because its
mixed with other different oils.)
1 1/2 tsp
of Pure Vanilla Extract
10ounces
of your favorite chocolate chips or chunks or chocolate of choice -
I use Enjoy Life Brand because its GLUTEN AND
NUT FREE *MADE IN A DEDICATED NUT AND GLUTEN FREE FACILITY!!! :D :D
YES ALAS IT DOES CONTAIN SOME EVAPORATED CANE JUICE, But is the only
chocolate i can find that's made in a nut free and gluten free
facility. and Its DAIRY FREE AND SOY FREE as well. ;D
*Of course a
wonderful Gluten free Liquor would be wonderful added as well :D and to change up the Flavors :
add Essential oils :)
about 5 to 6 drops :) Grapefruit, Lemon , lime, Rose , so forth :)
**PREP
A COOKIE SHEET OR TRAY AND PUT DOWN SOME WAX PAPER SO THE CHOCOLATE
DOES NOT STICK WHILE HARDENING.
In your
Double Broiler ( I just use a pan with a glass or Stainless Steel
bowl that i find fits well. Bring water to a boil turn down, make
sure the water isn't touching the glass bowl. add your Earth
balance or Coconut Oil, melt it and add the chocolate , with a
spatula mix thoroughly and keep mixing with a spatula until chocolate
is melted add the raisins and the vanilla Incorporated it all up and
then take a spoon the size of your choice and spoon the chocolate mixture and
form into the
shape desired and put it down on your wax paper tray.
wait if
you can till they harden and enjoy!! THEY ARE SO SO GOOD!
