JoAnna's Rocki'n Kimchi

Hello all here is my Rock'in Kimchie Recipe,  everyday staple in our home!



Health Benifits of Kimchi:
Fermented foods are a really important part of our diet and have been used in many cultures as a way to preserve foods and make them more digestible. Why are fermented foods important? Here's the deal. We all have microflora (bacteria) in our intestine which is absolutely necessary to keep us healthy. In the body, there is "good" bacteria and "bad" bacteria and it's important to keep the "good" bacteria thriving. Fermented foods contain populations of the "good" bacteria that help to keep the microflora balanced. This is necessary because antibiotics are so prevalent in our world (especially in modern agriculture production) and they kill the bacteria in your body, regardless of whether it is "good" or "bad."

Hello all here is my Rock'in Kimchie Recipe, Its kinda a mixture of Korean and non-traditional, using Sea Salt instead of Vinegar, I have posted allot of variations too so make it to suit your taste buds, But above all MAKE IT!!!!!  :) its soo good and I everyday staple in our home!

I find that Organic Veggies Ferment allot better, But of course if you cant find everything Organic that is ok, Try to do local all natural if you can! :)

Dairy Free, Nut Free, Sugar Free Coffee Creamer



Hi all I have been meaning to post for many months now so here is my dairy free nut free coffee creamer! Ill be posting more variations soon!! :) I know there are dairy free creamers available but not starch free ones and not sugar free ones so ENJOY AND LET ME KNOW WHAT YOU THINK!! :D

JoAnna's Dairy Free Coffee Creamer    
sugar free, nut free,gluten free,starch free
"French Vanilla"

 Of course to NOTE if u dont wish to do the raisin syrup ( this is done this way due to the facts is GAPS First Stage friendly  ) u can do honey or stevia or maple syrup or even raw sugar( of course is not gaps approved) if u wish



Fruit Syrup: (Organic soaked apricots would be lovely too I just don't have any right now or organic dates or Prunes would work too)
1 cup of Organic Soaked for (25 min or longer) Raisin (or your choice of preferred dried fruit)

1 Cup of Hot Filtered Water

add the raisin's and hot water in a food processor (or blender) and pulse until all is incorporated into a syrup like texture. Then Strain through a wire mesh trainer into a separate bowl. You want to make sure there are no floaters in your creamer :)
store in an airtight container in the fridge :0)

For the Creamer:
One can of Thai kitchen Coconut Milk (full fat not light) (or use your own homemade coconut milk extracted from dried organic raw coconut).
NOTE: Of course if u cant have Coconut or u wish to use some other Milk Sub , then Substitute it for the Coconut Milk. :)

1/4 Cup & 2 1/2 Tab of the Raisin Syrup (recipe above)
1 Tab of Pure Organic Vanilla Extract (sugar free or Homemade gluten free  , recipe coming soon).
Mix all together and put through a strainer to make a smooth Creamer :

HomeMade mayo :) (duck) and Rocking Dairy Free Ranch Dressing Two recipes in this POST

Here is My Recipe for Homemade Mayo
* I use Duck eggs or Guinea  Eggs or Goose Eggs :)




JoAnna's Homemade Mayo
2 Duck Large Pasteurized Egg yolk  of Choice *Directions for pasteurization  is on my blog as well!  I use Mascovey Duck eggs they are the size of 3 chicken eggs.
RECIPE FOR THAT HERE how-to-pasturize-eggs

(pasteurize the egg and then use the egg yolk for the mayo and the white for another recipe..)
1 1/2 tsp of fresh Lemon Juice
1/4 Tsp of Dijon Mustard
1 tsp Raw, Unfiltered Apple Cider Vinegar
1/2 tsp salt and more to taste
3/4 cup of canola Oil (or grape seed and even olive oil works)

Combine Egg yolk, the lemon juice , mustard and vinegar and 1/2 tsp of salt in a medium bowl.  Whisk until blended until a golden yellow about 30 seconds ( I used my food processor).

Using 1/4th tsp measure and whisking constantly, add 1/4 cup of oil into the yolk mixture a few drops at at time, all this will take about 4 min. Gradually add remaining 1/2 cup of oil in a slow thin stream, whisking or pulsing if using your Cuisinart food processor with the bottom blade attachment. This should take about 8 min, the mixture should be nice and thick! Cover and Chill. Keep Refrigerated!
It will Keep 2 weeks in the Fridge.
if you stir a tablespoon of whey into your homemade mayonnaise, and leave it out of the fridge for about 7 hours, then refrigerate it, it will last for a couple of months.

JoANNA'S ROCK'IN DAIRY FREE RANCH DRESSING
use the recipe above and then add :
1 Tab of dried onion powder
1/2 tsp of Tabasco Sauce or your hot sauce of choice
1 nice bunch of Fresh organic dill chopped
1 nice bunch of fresh organic parsley
salt and pepper to taste
1 tsp dried garlic
1 tsp of Dijon mustard
1 tsp ( optional ) Smoked Paprika
add this to your Mayo IN YOUR food processor and bam u have some Rocking Ranch Dressing !!
