JoAnna's Fabulous Vegan Focaccia Bread

JoAnna's Fabulous Vegan Focaccia Bread Free Of Many Allergens

During the Winter Months its hard not to have duck eggs ( I am currently  now Since I now have ducks , I am freezing eggs for the winter (How to freeze Eggs here a-post-about-eggs and how to freeze them )I was really missing good bread this exceeded my expectations! :D
Seriously guys this is amazing , light and fluffy and pure amazing!!! You will not be dissapointed I normally serve this with my Gluten free, Allergen free VEGAN , Nut Free Petso!! always a HUGE hit! :) (recipe for Diffrent Pesto Variations coming soon)




First do :EGG RE-PLACER
 (For Egg Re-placer use 1 Heaping tablespoon of Flax seeds or Chia Seeds (that were previously ground up in your coffee grinder, add the ground flax meal into a glass measuring cup and add 2 1/2 TAB of VERY WARM water, let sit for 10 min give or take till it gums up - walla vegan eggs lol :)  or you can USE Energy-Foods Brand Egg Re placer.



Second
Proof your YEAST :
2/3 cup of (filtered water ) Warm about 110degrees. 1 tab of  Active Dry Yeast

 2TAB OF Raw Agave Nectar  OR
2 Tab of Honey Only if u wish it not be VEGAN


3RD Mix Dry Ingredients in a Bowl
1/2 cup millet flour ( or u can use Teff)
1/4 Cup Sorghum Flour
1/4 cup Tapioca Flour
1/4 cup Arrowroot

5 tab of oatmeal flour ( make sure its labeled gluten free) I just use my Ninja Blender or u could use your Coffee Grinder.
1 tsp of xanthum gum

1/2 tsp of sea salt
1 Tab of Honey or Stevia in the raw to add a bit more touch of sweetness (your preference) .
1 1/2 tsp of Cream of Tartar
1 1/2 tsp of baking powder
1 tsp of baking soda

1 tsp of Garlic Powder - more if u wish
1 tsp of Onion Powder- more if u wish
1 tab of dried chives

Using your Mixer of Choice  I have a Kitchen Aid , Combine wet ingredients into Mixer, slowly add in MIXED dry ingredients , Mix on medium speed for 3 min.

also u can top with thinly sliced fresh tomato before baking :D

Grease a 8x8 with coconut or earth balance , Place parchment paper in the pan and then grease over the parchment. Sprinkle a bit of Oat grits (coarsely ground gluten free oats - optional)
 Add the Batter to the Prepared pan and spead evenly , Use a WET spatula to even the top 
(may have to dip the spatula in water a few times to achieve this.  Sprinkle with Fresh Rosemary and Sea Salt.
 Let rise in a Dry Warm place for 45 min.

Place in a 400 degree Oven, 6 min into baking time , drizzle a tab or so of organic extra virgin coconut oil or olive oil over the top of the bread, continue baking until golden brown and the toothpick comes out clean.
rough estimate is 34 to  45min baking time. but the toothpick test always works best me thinks :)

JoAnna 's Gluten Free VEGAN Chocolate Chip Cookies these are amazing!


So enjoy and bake away my friends ! If making these things VEGAN MAKE SURE YOUR INGREDIENTS ARE VEGAN. IF MAKING THESE DUE TO THE FACT THAT THEY ARE DAIRY AND GLUTEN AND EGG FREE AND NUT FREE MAKE SURE YOUR INGREDIENTS ARE !

JoAnna's Vegan Chocolate Chip Cookies  ( with Optional dried fruit added.

First take 2 table spoons of ground Flax seeds meal, ( to make this add whole flax seeds to a coffee grinder or blender and grind/blend)
and add 4 tab of warm water let set for at least 5 min till it gums up.

1 Cup Earth balance or Coconut Oil
3/4 Cup of Stevia in the raw ( or Xylitol or coconut sugar)
1/2Cup Maple Syrup
(or if u are NOT vegan but making these because they are egg free, then u can do 1/2 cup honey , 1/2 cup maple syrup)
1 tsp sea salt
1 1/2 tsp Baking Powered
1 tsp of baking soda
2 tsp of Vanilla extract
1 Cup Sorghum Flour
3/4 Cup of Teff Flour or 3/4 cup of Sweet Brown Rice
1/2 cup Tapioca starch ( or arrowroot)
1/2 tsp of Guar Gum ( or xanthum gum)
1 Cup of Raisins - optional or chopped up dates or any other dried fruit i wish
1 cup of Vegan Chocolate Chips  ( I USE Enjoy Life)

Preheat Oven to 375 Degrees F.

Cream the butter substitute and sweeteners in your mixer , add the gummed flax, till incorporated , then slowly add in the DRY mixture, then spatula in the chocolate chips. You want the dough when you take the mixer attachment out to not drip off the attachment  It should stick to the whip.
 chill in the fridge for an hour or overnight !

Place on cookie sheets with parchment paper or silicone slipmate.
Bake for 10 min or until the cookies are golden brown and the toothpick comes out clean.

Been an Eventful Weekend , Bountiful Baskets, More Chocolate Goodness Making In Time for Valentines Day!

So it has been rather an eventful weekend , Kiddos and Hubby still sick , i am still struggling with some health nonsense, But along with all the stress's and pressures of everyday life =) hahha I was able to pick up my 2 orders of  "Bountiful Baskets " if you have not heard of them more info here : http://www.bountifulbaskets.org/  

At first I was rather Hesitant , Being a Chef I love picking out my own produce and veggies , I don't know how else to explain it , and I just was not sure if it was going to be worth the $$
when you order the first time there is a first time fee and , I guess after each order there is a 5$? charge for each basket - so my Total this time for my First time Ordering was $42.00.
It included :

2 Bunches of Asparagus
2 bunches of Broccoli
2 Bags of Mini Apples
5 Cucumbers
4 zucchini
2 6oz. Containers of Blackberries
2 lbs total of Strawberries
11 Oranges
4 Large Grapefruits
2 bunches of bananas

IMPORTANT POST COME ONE COME ALL!!!

Hello all , Well for those who have been with me since 2009!!! and such I THANK YOU , VERY VERY MUCH, it has been quite the journey!!

And quite a LONG HEALTH JOURNEY!!!

As some of you know I am still on that health Journey I don't really think it will ever stop , but I am so blessed I have continued to get healthier and healthier , and I am very thankful to God for this !! :) And I also want to give a HUGE thank you to my friend Kim L. And I again want to THANK everyone who has encouraged me and prayed for me , and lifted me up , I have been lovingly serving you all since 2009

Gluten free , Vegan, Nut free Herb-ed Foccoia bread
with vegan , nut free , pesto !

And also allot of you know I have tired EVERYTHING AND I MEAN EVERYTHING TO MAKE THIS HAPPEN. SEEMS as If God has other plans, so I am announcing that I am setting aside my website and BLOG and everything for now ,1) God and 2)  Family  & Friends and 3)  health come first , My children's education is becoming more demanding as the kids get older and i need to focus on that.
I always go in that order .
I am not giving up but I am setting this all aside for now , God knows I have tried EVERYTHING to make this all happen for years!!
And I know things will be much easy once we get into our house we have been trying to build for years. We are very crammed in our small (shoebox ) apartment barley 800 sq feet and my kitchen and laundry room are in one teeny tiny place. I am just wearing myself out trying to do all for everyone else, I am burning out , also as I said kids come first and I feel like i am missing out on some things as i try to serve others web wise.

Lord willing down the road I will have enough $$ to do a website and have it all set up like all the other Blogger Moms do , so that I can make some $$ of of all my hard work , This is NOT easy for me!! AT all, But God has given me peace that I will come back to all this , Down the Road in HIS timing .

I will be keeping my blog up for I do have lots of info on here! and I will BE KEEPING MY FACEBOOK PAGE, i will continue to post my menu's and HEALTH FACTS, and I will continue to write down the things I make and all and PUT THEM ASIDE for when I do come back and I am able to bring them to you in a more proffesional manner! :D Where it will be a WIN WIN Situation for all of us!! If you wish to leave I can respect that and totally understand, but for those who wish to stay here and wait thank you . I appreciate you! :D So as I said I will be continuting posting pics and ideas , nice comments underneat are still loved and appreciated as I can jog those down in my Cookbook I'm still making , good to know what ppl want and don't want.

Perfectly Done Flaky, Gluten free, Vegan Allergen Free Pie Crust & Apple Pie Recipe

BEST EVER FLAKY GLUTEN FREE , VEGAN CRUST


This Recipe is For my Dear Friend Shelly E.  I love you girl!!! :D


Preheat oven to 375 for the first 10 min 
then Reduce the Heat to 350 for the rest of the baking time  ;D

1 CUP OF EARTH BALANCE - COLD (Or Cold Coconut Oil - yes of course if you wish to use butter or Lard go ahead and improvise but then it would not be vegan so lol)
1 CUP Sweet Rice Flour (organic) ( no this is NOT the same as white or brown rice)
1 Cup of Millet
½ Cup Sorghum
½ Tapioca or Arrowroot Starch
¼ stevia in the raw
1 Tsp of Sea Salt
2 Tsp of Xanthum Gum
1 1/2 Tsp of Baking Powder
½ cup's + 1 Tab of cold water



I egg white of choice for egg wash :) Use only if you wish it to be Non- Vegan, I use a duck egg on



Mix all the dry ingredients in a COLD STAINLESS STEEL BOWL.**I actually take a COLD stainless steel bowl and place it in another bigger stainless steel bowl with ice in it to keep it very cold!!!

After all dry ingredients are mixed add the COLD earth balance , use a pasty cutter and cut in the COLD Earth Balance until incorporated , almost like pea size balls form :)
Keep cold on the ice "platter" and form into a  Ball, this will make a top and bottom crust  or two bottom crust, whatever u desire :)

grease a bag and put in and place in the fridge for at least 2 hours.

After it has been in the fridge, take and cut in 1/2 and place on a floured counter or whatever use, and take your Silpat Non - Stick Baking Mat ( you can get them here through Amazon , I don't think any gluten free, allergen free kitchen should be without them  Silpat-Non-Stick-Baking ) and  put a little oil or such over it and place the oiled side  on top of your slightly floured crust . Roll your crust out over the Mat until its the desired thickness. Now beware , sometimes but not on all occasions it can crumble but i have tired making pie crust that dont crumble and they turned out great but DID not come out flaky so I am all about Flaky pie crusts! If you need to pick up the dough and press it into the prepared pie pan then do so without further delay or dropping of the head, ITS WORTH IT!
Then Take a Fork and Make marks on the bottom of your crust, then AFTER THAT IS done add your pie filling - i gave a nice recipe below .
To place a top crust,

I  roll it out just as I did above and it usually works out or on occasion press it together or , take a cookie cutter and make shapes then place on top of the apples.

Place in the preheated oven , follow the heating instructions i gave above
as One other tip I do use Pampered Chef's Pie Crust Shield works PERFECTLY! Take the Shield off when you have 15 min left of baking time :D

Pie is done when apples are soft and the crust is done Enjoy!! I know you will , My husband who can eat anything , is A PIE FANATIC! And his mom made the best pies i hear , This pie finally got that STAR FOR THE BEST PIE CRUST and filling ever especially for being , gluten free and allergen free

For the Apple Pie Filling :D
6 Large apple of choice , I like using the tart granny smith or pie apples.Juice from 2 whole organic lemon or 1/2 lemon 1/2 lime

1/4 cup of my Fool Proof Flour Mix or the High Protein Mix your Choice Link here my-gluten-free-flour-mixes
1/4 cup shy of Real Pure Honey
8 Tab of Pure Maple Syrup
1/4 cup of Stevia in the Raw
1 tsp of Cinnamon - if tolerated
1 tsp of Cloves  - if tolerated
Optional Zest Of one lemon or Lime

Mix all in a medium size bowl making sure you stir the apples in the citrus juice to keep the apples  from browning.
