JoAnna'sVEGAN French Banquettes REVISED AND UPDATED

JoAnna's Vegan Banquettes ( French Bread)



**



*Oatmeal grits (or cornmeal grits) for Loaf pan. and top of loaf.

First do your Egg Re-placer:2 to  1/2 Tablespoons of ground flax or chia seeds. Place in 1/2 cup of warm water, set aside to Gum up about 6 min.

Next "Proof Your Yeast"
1 cup or Warm water (Filtered) ,(110 degrees a bout's)
2 Tab of Maple Syrup , then add 2 tsp of Active Dry Yeast .
Set Aside for 8 min or until it doubles in size and Proofs :)
(or if not needing to be VEGAN use honey.


1 1/2 Cups + 7 Tab  of Sorghum Flour
1/2 Cup Millet Flour
1 Cup Tapioca Flour ( or Arrowroot Starch I found the bread MORE fluffier using Arrowroot) ;)

1 tbsp of xanthum gum
1 1/2 tsp of sea salt

1 1/2 tsp of garlic powder (more if u wish, OPTIONAL)
1 1/2 tsp of Onion power (Optional) - more if u wish.
1 Tab of Italian Seasoning
2 Tbsp of Olive Oil
1 tsp of Raw apple cider vinegar
1 cup of Water (filtered)
Melted Earth balance or Coconut oil . (Like 1 Tab - enough to spread the melted goodness over your loaves before u bake)
Minced Fresh Rosemary
Sea Salt

Grease your French or Banquette Pan I have this one.

so grease this with oil of choice take your "grits of choice" see above.
do not line your pan with foil , there are holes in the pan for a reason ;)

Mix your dry Ingredients in a bowl, set aside.
In your Mixer, add WET ingredients , then  add dry ingredients, Mix on Medium speed for about 4 min.

Carefully scoop out dough I use a big Ice Cream Scoop and Scoop onto the pans .
Coat the Top of the Loaves with Melted earth balance or coconut oil , sprinkle with freshly minced rosemary and sprinkle with sea salt and a few more grits.

let rise in a dry WARM place for 30 min (until it doubles in size)
Bake for about 26-30 min In a 400 degree oven , or until toothpick inserted comes out clean!!

JoAnna's Gluten Free Challah Bread ( Non Braided)

HAPPY EASTER!!!
 Easter is upon us and no meal would be complete without gluten free, delicious challah bread!! ( nut and peanut and chicken egg free & more) !
I hope to try a "Braided Version" But not sure with my incredibly busy week If I will be able to do that, I actually just got done teaching a great gal how to bake gluten free, and make my AMAZING Nut free, Dairy Free VEGAN Pesto!

JOANNA:GLUTEN FREE CHEF AND HEALTH ENTHUSIAST








Challah Bread

Gluten free, nut free, chicken egg free, buckwheat free and more!

1 cup of sweet brown rice flour
½ cup of millet
½ cup of Oat Flour ( gluten free, I just make my own by taking Bob's Red Mill Gluten free Oats , put in your blender or coffee grinder and WALLA FLOUR!

1 tab ½ of Dry yeast (PROOF)
1 ½ cups of WARM WATER
1 TAB OF HONEY for the water ^^
1 and ½ cups of Tapioca Flour
¼ cups of Arrowroot
1 TSP OF Xanthum Gum
1 tsp of salt
4 Tablespoons of  Honey
1 tst of Vanilla extract
3duck eggs + I yolk or 4 chicken eggs with 1 Yolk.

It will look like cake batter once beaten all together for 3 min.

Place in "Bunt Cake Pan" or whatever Shape u want it and let rise in a dry warm spot for 45min. (cover with oiled saran wrap   )

bake for 45 min , in a pre-heated oven.
Finished when tooth pick comes out clean and if the top seems to be getting too dark , cover lightly with foil near the end of the bake. :)

Been an Eventful Weekend , Bountiful Baskets, More Chocolate Goodness Making In Time for Valentines Day!

So it has been rather an eventful weekend , Kiddos and Hubby still sick , i am still struggling with some health nonsense, But along with all the stress's and pressures of everyday life =) hahha I was able to pick up my 2 orders of  "Bountiful Baskets " if you have not heard of them more info here : http://www.bountifulbaskets.org/  

At first I was rather Hesitant , Being a Chef I love picking out my own produce and veggies , I don't know how else to explain it , and I just was not sure if it was going to be worth the $$
when you order the first time there is a first time fee and , I guess after each order there is a 5$? charge for each basket - so my Total this time for my First time Ordering was $42.00.
It included :

2 Bunches of Asparagus
2 bunches of Broccoli
2 Bags of Mini Apples
5 Cucumbers
4 zucchini
2 6oz. Containers of Blackberries
2 lbs total of Strawberries
11 Oranges
4 Large Grapefruits
2 bunches of bananas

Embracing New Goals and Future

It's amazing how fast things change, yes we have all hear when God closes a door he opens another one.

But that does not mean one is not over the shock, and sadness of it right away,  So blessed to be able to pray and go to the Lord for peace and He definitely gave me the answer of direction I was looking for , quite abruptly lol, though I must say~
 So this is what is going on Just found out last night that there is

No chance as of now of,me  getting my masters in health and nutrition, Doula (certified and all), website $ opportunity due to events that I will not go into , just allot to take in when one has been working over 5 + years to those goals.

So I will commonsense with and continue to use my Blog as a ministry like I have been doing and serving you all , My work is still copyrighted , And I also want to remind you all to that this is a Ministry , I always put God, and Family and Friends first in the order, I already have many demanding responsibility  , Homeschooling, Help running our Construction Business, Still on my healing journey, and making everything from scratch , prepping, canning , preserving , milling, drying, fermenting, gardening, animals, crafts and sewing... and such not.

And I would also LOVE to give a shout-out to my dear friends, Susi, Courtney and Angela, and also to my sister Jackie who was most helpful and understanding today.

JoAnna's Gluten free Oatmeal Raisin Lime Cookies




Oatmeal Raisin Lime Cookies 

These are perfect!!!!!! These are a hit at our house and I make them several times a week! :D

350 degree (Oven)

1 cup earth balance
  • 1 cup Stevia in the raw
    ¼ cup Honey
    ¼ cup Maple Syrup
  • 2 Duck eggs (or 3 eggs of your choice)


  • 2 teaspoon vanilla
  • 1 1/2 cups My Fool Proof Mix
    1 ½ tsp of Xanthum Gum
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
    ZEST OF ONE LIME
  • 1 teaspoon salt
  • 3 cups Certified Gluten-Free rolled oats
  • 2 cups raisins


    Prepare your two cookies sheets with parchment paper ( I think I yielded 3 cookies sheets with this recipe ) Heat oven to 350 degrees.




  • Mix up the dry ingredients together in a medium bowl and set aside.

    In your Mixer, I use a Kitchen Aid (whisk attachment) , cream the earth balance and sweeteners and eggs and vanilla.

    Slowly add in your dry ingredients and then stir the oatmeal in slowly and stir in or add your raisins, I have to admit I just use my kitchen aid .

    I use a ice cream scoop and , scoop my batter out and place them on the prepared cookie sheets, place in pre-heated oven. Bake for 10 min or longer depending on your oven, just make sure the tooth pick comes out clean.

This is the brand I went with , i started breaking out with Bareminerals, and when i contacted the company they said they couldnt give me a yes or a no and i called and emailed for days, they said that they couldnt be sure so they adivse i not use them , plus to let you know allot of there prodcuts are NOT gluten free...

Our products are free of peanuts and gluten. We have coconut in some of our products. But they are not Nut free , there oils contain (Argan) Kernel Oil!
wow they are wrong some of there products CONTAIN GLUTEN!!! LIKE THERE LIP GLOSS!!!!  (Wheat) germ!!!

There shadows only contain: Ingredients: Mica, Titanium Dioxide, Tin Oxide

Updated Organic Coconut Oil Info as of October 2012

So as you can tell I have found out my Nut and peanut intolerence has turned pretty bad to a full blown Anaphylactic  allergy!!!!!! So I am re-looking at products and updating the info as i get it from the manufacturer.
